Home-Made Bread Crumbs

You Will Need:
Food processor
Oven tray
Day old Bread 1-2 slices per peice of meat - extra for nuggets.

Method:
  1. Preheat grill to medium-high.
  2. Place bread into processor and pulse till bread is in medium size chunks - then process till fine crumbs are created.
  3. Spread crumbs on oven tray and place under grill, you will need to stay by and keep moving the crumbs so they dont burn.

Tips:

  • Using day old or fresh bread is better then stale as you can use your processor to create crumbs.
  • If you are still able to easily tear the bread your processor should be able to crumb it fairly easily (Check your processor manual if not sure).
  • Great for people on low preserative, elimination diets or gluten free as you just use whatever bread you have.

Elimination Diet Anzac cookies

You will need:

  • Baking trays (with baking paper on)
  • Spoon
  • Saucepan or microwave safe bowl
  • Large mixing bowl
  • Measure cups

Ingredients:
1 cup plain flour
1 cup Oats
3/4 cup Brown sugar
125g butter
2 Tbs Golden syrup
1 tsp Bi-carb soda

Method:
  1. Preheat oven to 180 degrees.
  2. Melt the butter and golden syrup in microwave or on stove, while it is melting place the flour, oats and brown sugar in a large bowl
  3. Once butter is melted move quickly to add the bi-carb to the hot butter mixture, stir and it should froth up.
  4. Pour butter mixture into dry ingredients and mix well, the mixture should be able to roll into a ball easily and hold the shape - add a touch more butter if crumbly.
  5. Roll mixture into balls and place on oven tray, bake for 10-12mins.

Tips & Suggestions:

  • Always check all ingredients before cooking for someone on elmination diet, plain butter is the best way to go and in my experience the more basic ones tend to have less in them and therefore are fine to have.
  • If you are on a gluten free elmination diet substitute the flour for 3/4 gluten free flour and 1/4 rice flour.
  • Make these whatever size you like - small round will have a chewy centre, big and flat will be crunchy... and the best thing about cooking them, is you can make them just how you like!!
  • Not on elimination diet?? Then add 1 cup of coconut for traditional anzac cookies, you may need to add a little more butter to keep the right consistency.
